Ingredients

4 salmon fillets

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup quinoa

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 cup red onion, finely diced

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

1 avocado, sliced

1 tablespoon olive oil for quinoa

1/2 teaspoon salt for quinoa


Instructions

1. Preheat the oven to 400 degrees Fahrenheit.

2. Place the salmon fillets on a parchment-lined baking sheet.
