Ingredients
2 pounds chicken thighs or drumsticks
1 cup buttermilk
1 tablespoon hot sauce
1 1/2 cups panko breadcrumbs
1/2 cup flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil (for drizzling)
**Hot Honey Glaze:**
1/3 cup honey
1 tablespoon hot sauce (adjust to taste)
1 teaspoon apple cider vinegar
1/2 teaspoon chili flakes (optional)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Spray with cooking spray.
2. In a bowl, whisk together buttermilk and hot sauce. Add chicken and marinate for at least 30 minutes (or overnight for best flavor).
3. In another bowl, mix panko breadcrumbs, flour, paprika, garlic powder, onion powder, salt, and pepper.
4. Remove chicken from marinade and coat thoroughly in the breadcrumb mixture, pressing to adhere.
5. Place coated chicken on the prepared rack and lightly drizzle or spray with olive oil.
6. Bake for 35–40 minutes, flipping halfway through, until golden and crispy and internal temperature reaches 165°F (74°C).
7. Meanwhile, prepare the glaze: In a small saucepan, heat honey, hot sauce, vinegar, and chili flakes over low heat for 2–3 minutes.
8. Brush or drizzle hot honey glaze over crispy baked chicken right before serving. Enjoy immediately!
Notes
Make it spicier: Add more chili flakes or sriracha to the glaze.
Use air fryer: Cook at 390°F (200°C) for 20–22 minutes, flipping halfway.
