Description

This delicious baked apple fritter donut bread is soft, moist, and packed with cinnamon-spiced apples. It bakes like a donut loaf, then gets topped with creamy vanilla icing for a bakery-style treat everyone will love!


Ingredients

FOR THE BREAD:

2 cups all-purpose or gluten-free 1:1 flour

1½ tsp baking powder

½ tsp salt

1 tbsp cinnamon

¾ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1½ tsp vanilla extract

¾ cup milk

2 cups peeled and diced apples (Honeycrisp, Fuji, or Gala)

2 tbsp brown sugar (for layering)

1 tsp cinnamon (for layering)

FOR THE CREAMY VANILLA ICING:

1 cup powdered sugar

23 tbsp milk or cream

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Grease and line a 9×5 loaf pan.

2. Whisk flour, baking powder, salt, and cinnamon in a bowl.

3. In a separate bowl, beat softened butter and granulated sugar until creamy.

4. Add eggs, vanilla, and milk, mixing until smooth.

5. Pour ⅓ of batter into loaf pan. Add a layer of diced apples and sprinkle with brown sugar + cinnamon.

6. Repeat layers and finish with remaining batter.

7. Bake 55–65 minutes or until a toothpick inserted in the center comes out clean.
