Description

This Apple Pecan Cake is ultra-moist, filled with chunks of apple and crunchy pecans, then soaked in a warm caramel glaze that melts into the crumb. It’s the ultimate comfort dessert for chilly days, holidays, or anytime you need a little cozy on your plate.


Ingredients

**For the Cake:**

2 cups granulated sugar

1 cup vegetable oil

3 large eggs

1 tablespoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

3 cups peeled and chopped apples (Granny Smith or Honeycrisp)

1 cup chopped pecans

**For the Caramel Glaze:**

1/2 cup unsalted butter

1/2 cup brown sugar

1/4 cup milk

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 325°F (163°C). Grease and flour a 9×13-inch pan or bundt pan.

2. In a large bowl, whisk together sugar, oil, eggs, and vanilla until smooth.

3. In another bowl, mix flour, baking soda, salt, and cinnamon.

4. Gradually stir dry ingredients into the wet mixture until combined.

5. Fold in chopped apples and pecans.

6. Pour batter into prepared pan and bake for 50–60 minutes, or until a toothpick comes out clean.

7. While cake bakes, make the glaze: In a saucepan, melt butter over medium heat.

8. Stir in brown sugar and milk. Bring to a boil and simmer 2–3 minutes. Remove from heat and stir in vanilla.

9. Pour warm glaze over the hot cake immediately after baking. Let cake absorb glaze as it cools.

Best served warm or at room temperature.

Store tightly covered at room temp for 3 days or refrigerate for up to 5.
