Description
These almond croissant bites are buttery, flaky, and filled with sweet almond frangipane — just like a classic bakery almond croissant but perfectly bite-sized. Ideal for brunch, weekend treats, or holiday mornings.
Ingredients
1 sheet puff pastry, thawed
1/2 cup almond flour
1/4 cup sugar
2 tablespoons butter, softened
1 egg (divided)
1/2 teaspoon almond extract
Pinch of salt
2 tablespoons sliced almonds
Powdered sugar, for dusting
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a small bowl, mix almond flour, sugar, softened butter, half the egg, almond extract, and salt to make the frangipane filling.
3. Cut the puff pastry into 16 small squares.
4. Place a small spoonful of frangipane in the center of each square and fold edges slightly inward.
5. Brush the tops with the remaining beaten egg.
6. Sprinkle with sliced almonds.
7. Bake for 15–18 minutes until golden and puffed.
8. Cool slightly, then dust with powdered sugar before serving.
Notes
Add a little orange zest for a citrus twist.
Use store-bought croissant dough instead of puff pastry for a richer flavor.
These keep well at room temperature for 1 day and reheat beautifully in the air fryer.
